Want a different egg dish? or want another menu for breakfast, try this recipe Shakshuka Tunisian origin. Middle east style egg dishes with exotic flavors.
Ingredients:
- 1 tablespoon olive oil
- 1 cup red bell pepper cut into long
- pieces 1 cup long green pepper
- 2 cups vertically sliced red onion
- 1/4 teaspoon salt
- 2 cloves garlic, minced
- 1/2 cup tomato sauce
- 4 large eggs
- 2 cups of rice red cooked
- 1/4 cup basil leaves (ataukemangi) fresh
- 2 tablespoons feta cheese
How to Make:
1. Heat a non-stick frying pan 1 over medium heat. Add oil to the pan.
2. Add peppers, onion, and salt, and cook 5 minutes, stirring occasionally. Add garlic and cook 30 seconds. add the tomato sauce. Bring to a boil, reduce heat, cover and simmer 5 minutes.
3. Shape 4 (about 2 inches) indentations in the sauce using the back of a spoon. Break the eggs, put in a small bowl and gently go into each indentation. Cover and cook 6 minutes or until eggs are cooked.
4. Cook rice and serve over hot rice Shakshuka, give a sprinkling of cheese and basil.
