My mother-in-law educated me this recipe and I rearranged a bit. I'm not a huge fan of fresh tomatoes, so with the canned tomat
Ingredients
- 1−2 eggplants
- 1 big bell pepper (or 4 small green peppers)
- 1 zucchini
- 1 can canned tomato (diced)
- some oregano
- pepper and salt
- some organic olive oil
- (optional) an onion, bacon/ham or possibly a canned tuna +
Method
- Cut the eggplants in small cubes. Spread the organic olive oil in a pot and fry them.
- Cut the bell pepper(s) and boost the pot to fry together.
- Cut the zucchini and increase the pot.
- Add the canned tomato, the pepper, salt along with the oregano in the game. Cook for approximately ten minutes.
- I utilize a pot warmer so it continues cooking slowly until meal time.
